Baked Potato Casserole
8 medium potatoes, peeled and cubed
1 c. evaporated Milk
1/2 c. sour cream
1 tsp salt
1/2 tsp ground black pepper
2 c. shredded cheddar cheese, divided
6 slices bacon, cooked and crumbled, divided
sliced green onions (optional)
Boil potatoes in large saucepan 15-20 min. or until fork tender; drain. Return to saucepan; add evaporated milk,sour cream, salt and pepper. Beat with hand-held mixeruntil smooth. Stir in 1-1/2 cups cheese and half of bacon.Spoon mixture into greased casserole dish. Bake for 20-25 min. at 350°F. Top with remaining 1/2 c. cheese, remaining bacon and green onions. Bake for an additional3 minutes or until cheese is melted.
