Homemade Pumpkin Butter


1 29 oz. can pumpkin puree or solid pack pumpkin (not pumpkin pie filling)
1/2 c. granulated sugar
1/2 c. packed light brown sugar
1 c. 100% pure apple juice (no sugar added) or apple cider
2 tsp. ground cinnamon
1 tsp. nutmeg
1/2 tsp. ground ginger
1/2 tsp. nutmeg
1/2 tsp. ground cloves
2 tsp. lemon juice

In a large glass bowl combine all ingredients except lemon juice. Cover with a sheet of wax paper or paper towel. Cook on high power for 6 minutes, stir. Cook an additional 6 min., stir. Cook for an additional 3 minutes, stir remove bowl from microwave. Carefully remove loose cover and stir in lemon juice. Cool completely. Cover air tight and stir in refrigerator.
